Taco Salad
Prep Time: 30 min
Cook Time: 10 min
2 lbs ground beef
or 2 lbs boneless skinless chicken thigh cut into bite sized pieces with scissors
1 large onion diced
Texas Original Taco Skillet Sauce by Rick Bayless and Frontera
1 head of lettuce of choice (bag of spinach, iceberg, romaine)
2-5 tomatoes depending on size and preference
Lite Craft Catalina Dressing (yes i know the link goes to the full fat, and its good too just on the sweeter side)
Fritos
Refried beans if you just have to
Guacamole if you're in the mood
1. Saute your diced onion. Cook your meat. Add the taco sauce. If you went with chicken you can cut before (my preference) or you can cut after (scissors or knife). And you may want to skip the taco sauce with the chicken so you can enjoy the exciting flavor of chicken.
2. Chop tomatoes. Cut lettuce. Add fritos to bowl. Combine desired ingredients in your bowl or plate and enjoy.
