Pancakes

Pancakes 

PrepTime: 5 min
Cook Time: 10 min
Makes: 18 small pancakes

2 cups Pancake Mix*
2 eggs
1 tsp vanilla
1 cup milk of choice (could need up to 1 more cup for thinner pancakes)

Mix all ingredients together and cook on non stick skillet.They're ready to flip when you see bubbles popping through.  On occasion these can be on the thicker/cakier side.  If that's not how you like them, add a little milk and test until they're how you like them. 

**Also an option to add cut up fruit to the batter**


*Pancake mix is made from a homemade gluten free (but not paleo) flour mix.  We make this up in bigger batches and store it so that its ready and waiting.
