Bacon Wrapped BBQ Chicken
Prep Time: 15-20 min
Cook time: 30 min
1 bag HEB boneless chicken thighs (we buy frozen, I think its 4lbs?)
1 bottle BBQ sauce, Bulls-Eye is the safe brand of choice
1 package bacon, we like regular but thick cut would be ok
1. Make sure chicken thighs are defrosted. Heat oven to 350 degrees.
2. Using scissors cut your bacon in half so the pieces aren't as long. Then cut the chicken thighs in half so that they are long skinny pieces (you could do short fat square pieces but they dont wrap as pretty).
3. In a 9x13 pan coat the bottom of the pan with nonstick spray. Using a spoon or your kitchen paint brush lather some bbq sauce on the bottom of the pan. Wrap each piece of chicken with a piece of bacon placing them in the pan as you go. When the pan is full take your handy kitchen paint brush and coat the chicken/bacon wraps smearing sauce as if you were Van Gogh.
4. Bake for 30 min or until chicken is 365 degrees.
